The flaked coconut coating on the outside gives every slice a lovely texture, and the cake itself stays incredibly moist all the way through. I cut into it after dinner and the three layers held up perfectly, no crumbling at all.
Cut into it and the layers held together perfectly—no collapsing, just that snowy coconut flake coating everywhere. The real coconut milk in the mousse comes through clearly, rich but not cloying. Wish it lasted longer in our fridge, but every slice was worth it.
