Voltámos a fazê-lo com a nossa Cheesecake de Tartaruga, feita a partir de uma receita direta do Brooklyn. É um bolo de 10" com pedaços de nozes-pecã mastigáveis cobertos com caramelo por cima de uma cheesecake cremosa. Esta mistura de queijo creme, nozes e caramelo é uma verdadeira viagem de sabores.
The caramel layer on top is thick and gooey, almost like a candy shell that cracks when you cut into it. Those pecan clumps are scattered generously so you get that salty-sweet crunch in every single bite. I ordered it for a birthday and the whole table went quiet, which says everything.
The caramel coating is thick enough to crack slightly when you cut into it, which is exactly what I want from a turtle cheesecake. Those chewy pecan clumps give it a nice texture contrast against the creamy filling, and it disappeared way faster than I expected at our dinner party.
I’ve made plenty of cheesecakes in my day, but this one’s chewy pecan clumps and creamy center actually lived up to the Brooklyn hype. Each slice held together nicely even after a few days in the fridge, which is more than I can say for most store-bought versions.
